Dough Mixer: The initial stage involves mixing the ingredients (flour, sugar, fat, eggs, leavening agents, etc.) to form a consistent dough. This can be done using a standalone mixer or an integrated mixing unit within the machine.
Cutting Mechanism: The sheeted dough then passes through a cutting mechanism which shapes the dough into individual biscuits. This can be done using rotary cutters, wire-cut dies, or other specialized cutting tools depending on the desired shape and size of the biscuits.
Baking Oven: The shaped dough pieces are then transferred to a baking oven. Soft biscuits typically require a shorter baking time compared to crispy ones to maintain their soft texture. The oven may be a tunnel oven or a conveyor belt oven with precise temperature and humidity controls.
Cooling Conveyor: After baking, the biscuits are cooled on a conveyor system to room temperature. Proper cooling is essential to prevent the biscuits from becoming too hard or overcooked during the packaging process.
Packaging System: Once cooled, the biscuits are packaged automatically. This could involve placing them into bags, trays, or other packaging materials, and then sealing them for distribution.
